Simple Cowboy Caviar Dip for Graduation Party Chips and Veggie Platter

I first made this cowboy caviar for my niece's graduation party three summers ago, and it was gone before the burgers even hit the grill. Ever since, it has been my go-to when I need something easy, colorful, and crowd-pleasing all at once.

This dip comes together in about fifteen minutes with no cooking required, which is exactly what you want when you are already juggling a dozen other party dishes. It is fresh, filling, and looks gorgeous next to a big platter of tortilla chips and crunchy veggies.

Drain and rinse the black beans and black-eyed peas thoroughly, then drain the corn. Add all three to a large mixing bowl.

Dice the red bell pepper, green bell pepper, and red onion into small, even pieces and add them to the bowl. Finely dice the jalapeño, removing the seeds if you prefer less heat, and add it in as well.

Halve the cherry tomatoes and add them to the bowl along with the chopped fresh cilantro.

In a small bowl or jar, whisk together the lime juice, olive oil, red wine vinegar, garlic powder, cumin, chili powder, salt, and black pepper until fully combined.

Pour the dressing over the veggie and bean mixture and stir everything together gently until well coated. Taste and adjust salt or lime juice as needed.

Cover the bowl and refrigerate for at least 30 minutes to let the flavors come together. This step makes a real difference in taste.

Just before serving, gently fold in the diced avocado so it stays fresh and does not turn brown. Transfer to a serving bowl and set out with tortilla chips and a veggie platter.

Tips & Notes

  • Make this the night before and leave out the avocado. Add the avocado right before guests arrive for the freshest look and flavor.
  • To keep the avocado from browning if you need to prep it slightly ahead, toss the diced pieces in a little extra lime juice before folding them in.
  • If you are not a cilantro fan, fresh flat-leaf parsley works nicely as a substitute without changing the overall flavor too much.
  • This dip is excellent stuffed into lettuce wraps or spooned over grilled chicken if you have leftovers the next day.
  • For a smokier flavor, swap the chili powder for a half teaspoon of smoked paprika. It adds a really nice depth.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. The avocado will darken over time, so stir before serving and add a fresh squeeze of lime juice to brighten it back up.
