Ingredients
- 1 large round slice seedless watermelon , about 1.5 to 2 inches thick, cut crosswise from the center of the melon
- 8 oz cream cheese , softened to room temperature
- 3 tbsp powdered sugar
- 1 tsp pure vanilla extract
- 2 tbsp honey , plus more for drizzling
- 1 cup fresh strawberries , hulled and sliced
- 1 cup fresh blueberries
- 1 cup fresh kiwi , peeled and sliced into half-moons
- 1/4 cup fresh mint leaves , for garnish
- 2 tbsp shredded coconut , toasted, optional but really good

- Pick the watermelon from the very center of the melon for the widest, most pizza-like round. Ask your grocery store to cut it fresh if you are not comfortable doing it at home.
- Make sure your cream cheese is fully softened before mixing. Cold cream cheese will leave lumps and will not spread smoothly.
- Toast the shredded coconut in a dry skillet over medium heat for 2 to 3 minutes until golden. It adds a subtle nutty crunch that really elevates the whole thing.
- This is best assembled no more than 30 minutes before serving. Watermelon continues to release liquid over time, so do not make it hours ahead.
- Swap the fruits based on what is ripe and in season. Raspberries, mango, peaches, and blackberries all work beautifully here.
