Sweet cantaloupe and salty prosciutto threaded onto picks for a no-cook appetizer that looks like you tried harder than you did.
Ingredients
- 1 medium cantaloupe , ripe, chilled
- 4 oz prosciutto , thinly sliced, about 8 slices
- 1 tbsp fresh mint leaves , small leaves or torn
- 1 tsp extra virgin olive oil , for drizzling, optional
- 1 tsp flaky sea salt , like Maldon
- 1 tsp black pepper , freshly cracked
- 16 small wooden skewers or toothpicks , 6-inch picks work well

- Use a melon that gives very slightly at the stem end and smells sweet at room temperature. An underripe melon will taste flat against the salt of the prosciutto.
- Keep prosciutto slices separated with their paper backing until you are ready to use them. They stick together fast and tear when you try to pull them apart cold.
- If assembling more than 20 minutes ahead, cover loosely with plastic wrap and refrigerate. Pull them out 5 minutes before serving so the melon is not icy cold.
- Honeydew works in place of cantaloupe. The flavor is milder but the color contrast with prosciutto is still striking.

Why This Works at a Picnic
There is no dressing that will wilt, no cheese that will sweat, and no bread that will go soggy. These skewers are stable for about 30 minutes at outdoor temperatures, which is exactly the window most picnic appetizers need to survive.
The salt in the prosciutto pulls forward when it sits against the sweet melon, so the flavor actually improves for the first 10 minutes after assembly. Assemble them just before you leave and they will peak right when guests arrive.
Swaps That Actually Work
Serrano ham is a slightly firmer, nuttier alternative to prosciutto and holds its fold a little better in heat. Speck is smokier and changes the whole flavor profile in a good way if you want something less delicate.
For the melon, watermelon cubes cut into 1-inch pieces work beautifully but release more juice over time. Pat them dry with a paper towel before threading or the picks will slide.
