Cut the cantaloupe in half and scoop out the seeds. Slice into 1-inch-thick wedges, then cut the rind off each wedge. Cut the flesh into roughly 1-inch cubes. You want pieces firm enough to hold a pick without crumbling. A ripe melon will smell floral and faintly sweet right at the cutting board.

Tear or fold each prosciutto slice lengthwise into a long strip about 1 inch wide. The meat should feel silky and cool between your fingers. If it tears unevenly, that is fine. Rustic folds hold just as well.

Fold one strip of prosciutto loosely around a cube of melon, then thread the pick through both so the prosciutto is secured against the melon. The pick should go through cleanly with a small resistance, not mush. Repeat with remaining melon and prosciutto, about 16 skewers total.

Arrange skewers on a platter in a single layer. Tuck small mint leaves between skewers or press one gently onto each piece. The green against the orange makes the platter look intentional.

Drizzle lightly with olive oil if using, then finish with a pinch of flaky salt and a few cracks of black pepper over the whole platter. Serve within 30 minutes for the best texture.

Tips & Notes

  • Use a melon that gives very slightly at the stem end and smells sweet at room temperature. An underripe melon will taste flat against the salt of the prosciutto.
  • Keep prosciutto slices separated with their paper backing until you are ready to use them. They stick together fast and tear when you try to pull them apart cold.
  • If assembling more than 20 minutes ahead, cover loosely with plastic wrap and refrigerate. Pull them out 5 minutes before serving so the melon is not icy cold.
  • Honeydew works in place of cantaloupe. The flavor is milder but the color contrast with prosciutto is still striking.
