Easy No-Bake Peach Delight Dessert When You Need Something Fast

My grandmother used to make a version of this every summer when the peaches were ripe and the kitchen was already too hot to even think about turning on the oven. I tweaked her recipe over the years to make it even faster, and now it's my go-to when I need a crowd-pleasing dessert without the stress.

This no-bake peach delight is cool, creamy, and packed with sweet peach flavor in every single layer. It feeds a crowd, travels well to potlucks, and honestly disappears faster than anything else on the dessert table.

Ingredients

Crust Layer

  • 2 cups graham cracker crumbs , about 14 full crackers crushed
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter , melted

Cream Cheese Layer

  • 8 oz cream cheese , softened to room temperature
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 8 oz whipped topping , like Cool Whip, thawed

Peach Layer

  • 2 cans sliced peaches in juice , 15 oz each, drained well
  • 3 oz peach gelatin powder , one small box, like Jell-O brand
  • 1/2 cup boiling water
  • 1/2 cup cold water

Topping

  • 8 oz whipped topping , thawed
  • 1/4 cup sliced almonds , optional, for garnish
  • 2 tbsp fresh peach slices , optional, for garnish

Instructions

Make the Crust

1
Combine the graham cracker crumbs, granulated sugar, and melted butter in a medium bowl and stir until the mixture looks like wet sand.
2
Press the mixture firmly and evenly into the bottom of a 9x13 inch baking dish using the back of a spoon or the flat bottom of a measuring cup.
3
Place the dish in the refrigerator while you prepare the next layer.

Make the Cream Cheese Layer

4
Beat the softened cream cheese with an electric mixer on medium speed until smooth and fluffy, about 2 minutes.
5
Add the powdered sugar and vanilla extract and beat again until fully combined and creamy.
6
Fold in the 8 oz of thawed whipped topping gently with a rubber spatula until no streaks remain.
7
Spread this mixture evenly over the chilled graham cracker crust and return the dish to the refrigerator.

Make the Peach Gelatin Layer

8
Dissolve the peach gelatin powder in 1/2 cup of boiling water, stirring for about 2 minutes until completely dissolved.
9
Stir in the 1/2 cup of cold water and let the mixture cool at room temperature for about 10 minutes. You want it cool but not set.
10
Arrange the drained peach slices evenly over the cream cheese layer.
11
Gently pour the cooled gelatin mixture over the peaches, letting it settle around and over them.

Chill and Top

12
Refrigerate the assembled dessert for at least 2 hours, or until the gelatin layer is fully set.
13
Once set, spread the remaining 8 oz of whipped topping evenly over the top.
14
Garnish with fresh peach slices and sliced almonds if using, then slice into squares and serve cold.

Tips & Notes

  • Drain the canned peaches really well and pat them dry with paper towels so the gelatin layer sets properly and does not get watery.
  • Make sure your cream cheese is fully softened before mixing or you will end up with lumps in that layer.
  • The dessert is even better made the night before, the layers firm up beautifully overnight in the fridge.
  • Fresh ripe peaches work wonderfully here in summer, just peel and slice them thin and skip patting dry since fresh peaches have less excess liquid.
  • Press the crust firmly into the pan so it holds together cleanly when you slice and serve.
Storage: Cover tightly with plastic wrap or a fitted lid and refrigerate for up to 4 days. The crust may soften slightly over time but the flavor stays great. Do not freeze as the whipped topping and gelatin layers do not thaw well.

Why This Peach Delight Keeps Showing Up at Every Gathering

There is something about the combination of a buttery graham cracker base, that fluffy cream cheese layer, and sweet peachy gelatin on top that just works every single time. Each layer brings something different, crunch, creaminess, and a fruity brightness that feels like summer in every bite.

I have brought this to Fourth of July cookouts, baby showers, and random Tuesday dinners when someone needed cheering up. It always gets requests for the recipe, which makes it even more fun to share.

Simple Swaps to Make It Your Own

If peach gelatin is hard to find, orange gelatin works surprisingly well here and pairs beautifully with the peach slices. You can also swap the graham cracker crust for crushed vanilla wafers if that is what you have on hand.

For a little extra richness, stir a few tablespoons of peach preserves into the cream cheese layer before spreading it. It adds a concentrated peachy flavor that takes the whole dessert up a notch without any extra effort.
