Cowboy Caviar Recipe (Healthy Summer Party Dip)

Ingredients
- 1 can black beans , 15 oz, rinsed and drained
- 1 can black-eyed peas , 15 oz, rinsed and drained
- 1 can whole kernel corn , 15 oz, drained, or 1.5 cups fresh or frozen and thawed
- 1 red bell pepper , diced small
- 1 green bell pepper , diced small
- 1 jalapeño , seeded and minced, add more if you like heat
- 1 small red onion , finely diced
- 1 cup cherry tomatoes , halved
- 1 avocado , diced, added just before serving
- 1/3 cup fresh cilantro , roughly chopped
- 3 tablespoons fresh lime juice , about 2 limes
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon honey , or agave to keep it fully vegan
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1 teaspoon kosher salt , plus more to taste
- 1/4 teaspoon black pepper

- Dice everything roughly the same size so you get a little of everything in each bite.
- If you are making this more than a few hours ahead, leave out the avocado and tomatoes and stir them in right before serving to keep everything fresh.
- Taste the dressing before you pour it on. Every lime is different, so adjust the acidity and sweetness to your liking.
- Let it sit longer than 30 minutes if you can. An hour or two in the fridge makes the flavors even brighter.
- This doubles beautifully for a big crowd. Just use your largest bowl.
