Brown Sugar Grilled Pineapple Dessert Skewers

My kids ask for these every summer, and I started making them the night I needed a dessert in under an hour with nothing but a pineapple and a half-empty bag of brown sugar.

In a large bowl, whisk together the melted butter, brown sugar, cinnamon, and salt. The mixture will smell warm and slightly smoky from the sugar even before it hits the heat.

Add the pineapple chunks and toss until every piece is coated. The glaze will be thin and sticky, and the chunks should look glossy.

Thread the pineapple onto skewers, leaving a small gap between pieces so the heat can move around them. Plan on 4 to 5 chunks per skewer.

Place skewers on the grill and cook for 4 minutes without moving them. You are waiting for the sugar to caramelize, and you will smell a toasty, almost burnt-caramel edge right before it is perfectly done.

Flip each skewer and grill for another 4 to 5 minutes. The pineapple should have deep golden grill marks and feel slightly soft when pressed with tongs.

Tips & Notes

  • If your brown sugar glaze starts dripping and causing flare-ups, move the skewers to an indirect zone for 1 to 2 minutes until the flames die down.
  • Serve over a scoop of vanilla ice cream so the heat from the pineapple melts it slightly at the edges.
  • A fresh pineapple gives better texture than canned. Canned chunks hold too much water and steam instead of caramelize.
  • Metal skewers conduct heat and cook the inside of each chunk slightly faster. Either works, but metal is easier.
